Breakfast Quesadillas

Ingredients
  

  • 4 large flour tortillas
  • 6 eggs beaten
  • 1 cup of shredded cheese Cheddar, Monterey Jack, or a blend
  • 1 cup of cooked sausage or ham diced
  • Salt and pepper to taste
  • Butter or oil for frying

Instructions
 

  • In a non-stick skillet over medium heat, cook the scrambled eggs seasoned with salt and pepper until they are just set. Remove the eggs from the skillet and set aside.
  • In the same skillet, add a bit more butter or oil if needed, and place one flour tortilla flat in the skillet.
  • Sprinkle a quarter of the cheese evenly over the tortilla, followed by a quarter of the scrambled eggs and a quarter of the cooked sausage or ham.
  • Add another sprinkle of cheese on top of the eggs and sausage/ham to help the top tortilla stick.
  • Place another tortilla on top, pressing down gently. Cook for 2-3 minutes or until the bottom tortilla is golden brown.
  • Carefully flip the quesadilla with a spatula, and cook the other side for another 2-3 minutes, or until golden brown and the cheese is melted.
  • Remove the quesadilla from the skillet and repeat the process with the remaining ingredients to make three more quesadillas.
  • Cut the quesadillas into wedges and serve hot with optional garnishes like sour cream, salsa, avocado slices, or hot sauce.
