1cupof shredded cheeseCheddar, Monterey Jack, or a blend
1cupof cooked sausage or hamdiced

Instructions
In a non-stick skillet over medium heat, cook the scrambled eggs seasoned with salt and pepper until they are just set. Remove the eggs from the skillet and set aside.
In the same skillet, add a bit more butter or oil if needed, and place one flour tortilla flat in the skillet.
Sprinkle a quarter of the cheese evenly over the tortilla, followed by a quarter of the scrambled eggs and a quarter of the cooked sausage or ham.
Add another sprinkle of cheese on top of the eggs and sausage/ham to help the top tortilla stick.
Place another tortilla on top, pressing down gently. Cook for 2-3 minutes or until the bottom tortilla is golden brown.
Carefully flip the quesadilla with a spatula, and cook the other side for another 2-3 minutes, or until golden brown and the cheese is melted.
Remove the quesadilla from the skillet and repeat the process with the remaining ingredients to make three more quesadillas.
Cut the quesadillas into wedges and serve hot with optional garnishes like sour cream, salsa, avocado slices, or hot sauce.
