Zucchini Parmesan Foil Packet Recipe

Ingredients
  

  • 4 medium zucchinis sliced
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 4 tablespoons butter sliced
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preheat your campfire or grill to medium-high heat.
  • Lay out four large pieces of aluminum foil, enough to fully enclose the zucchini slices.
  • In a mixing bowl, combine the sliced zucchini, grated Parmesan cheese, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss well to ensure the zucchini slices are evenly coated.
  • Divide the zucchini mixture evenly among the foil pieces, placing it in the center of each piece.
  • Place a tablespoon of butter on top of the zucchini mixture on each foil piece.
  • Carefully fold the foil around the zucchini, sealing the edges to create a packet. Ensure the packets are well sealed so the steam and flavors are locked in.
  • Place the foil packets on the grill or over the campfire. Cook for 15-20 minutes, until the zucchini is tender.
  • Carefully open the foil packets (watch out for steam) and check if the zucchini is cooked to your liking.
  • Garnish with fresh parsley before serving.
