Preheat your campfire or grill to medium-high heat.
Lay out four large pieces of aluminum foil, enough to fully enclose the zucchini slices.
In a mixing bowl, combine the sliced zucchini, grated Parmesan cheese, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss well to ensure the zucchini slices are evenly coated.
Divide the zucchini mixture evenly among the foil pieces, placing it in the center of each piece.
Place a tablespoon of butter on top of the zucchini mixture on each foil piece.
Carefully fold the foil around the zucchini, sealing the edges to create a packet. Ensure the packets are well sealed so the steam and flavors are locked in.
Place the foil packets on the grill or over the campfire. Cook for 15-20 minutes, until the zucchini is tender.
Carefully open the foil packets (watch out for steam) and check if the zucchini is cooked to your liking.
Garnish with fresh parsley before serving.
