Lemon Chicken And Potatoes Foil Packet Recipe

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 lemons thinly sliced
  • 4 medium potatoes thinly sliced
  • 1 red onion thinly sliced
  • 4 cloves of garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 large aluminum foil sheets

Instructions
 

  • Preheat your grill or campfire to medium heat.
  • Slice the potatoes, onions, and lemons.
  • Mince the garlic.
  • Lay out a large sheet of aluminum foil.
  • Place a portion of the sliced potatoes in the center of the foil.
  • Season potatoes with salt, pepper, and half of the dried thyme and rosemary.
  • Place a chicken breast on top of the potatoes.
  • Drizzle chicken with olive oil.
  • Sprinkle chicken with more salt, pepper, and the remaining herbs.
  • Add a few lemon slices on top of the chicken.
  • Sprinkle minced garlic over the chicken.
  • Add a layer of red onion slices over the chicken.
  • Fold the aluminum foil to seal the packet tightly.
  • Repeat steps 4-13 for the remaining ingredients, creating individual packets.
  • Place the foil packets on the grill or over the campfire.
  • Cook for about 20-25 minutes, ensuring the chicken is thoroughly cooked and potatoes are tender.
  • Carefully open the packets to serve, being cautious of the steam.
