Grilled Veggie Wraps

Ingredients
  

  • Assorted vegetables bell peppers, zucchini, mushrooms, sliced
  • 4 large tortillas
  • Hummus

Instructions
 

  • Preheat your grill over medium heat, or set up a campfire grill with a grate over the flames.
  • Place the sliced vegetables in a bowl and drizzle with olive oil, tossing to coat evenly.
  • Grill the vegetables for 4-5 minutes per side, or until they are tender and slightly charred.
  • Remove the grilled vegetables from the heat and set aside.
  • Warm the tortillas on the grill for 1-2 minutes per side, until they are slightly toasted and pliable.
  • Spread a generous layer of hummus onto each tortilla, leaving a border around the edges.
  • Arrange a portion of the grilled vegetables onto each tortilla, distributing them evenly.
  • Carefully roll up the tortillas, tucking in the sides as you go, to form wraps.
  • Secure the wraps with toothpicks if necessary to hold them together.
  • Place the wraps back on the grill for 1-2 minutes per side, just to warm through and crisp up slightly.
  • Remove the wraps from the grill and let them cool for a minute before serving.
  • Serve the Grilled Veggie Wraps hot, either whole or sliced into halves or quarters for easy sharing.
