Preheat your grill over medium heat, or set up a campfire grill with a grate over the flames.
Place the sliced vegetables in a bowl and drizzle with olive oil, tossing to coat evenly.
Grill the vegetables for 4-5 minutes per side, or until they are tender and slightly charred.
Remove the grilled vegetables from the heat and set aside.
Warm the tortillas on the grill for 1-2 minutes per side, until they are slightly toasted and pliable.
Spread a generous layer of hummus onto each tortilla, leaving a border around the edges.
Arrange a portion of the grilled vegetables onto each tortilla, distributing them evenly.
Carefully roll up the tortillas, tucking in the sides as you go, to form wraps.
Secure the wraps with toothpicks if necessary to hold them together.
Place the wraps back on the grill for 1-2 minutes per side, just to warm through and crisp up slightly.
Remove the wraps from the grill and let them cool for a minute before serving.
Serve the Grilled Veggie Wraps hot, either whole or sliced into halves or quarters for easy sharing.
