Chicken Fajita Foil Packet Recipe

Ingredients
  

  • 4 boneless skinless chicken breasts, thinly sliced
  • 2 bell peppers preferably different colors, sliced
  • 1 large onion sliced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro chopped (for garnish)
  • 4 large aluminum foil sheets

Instructions
 

  • In a large mixing bowl, combine the sliced chicken, bell peppers, onion, and minced garlic.
  • Drizzle the mixture with olive oil, ensuring all ingredients are evenly coated.
  • Sprinkle chili powder, paprika, ground cumin, garlic powder, onion powder, salt, and pepper over the chicken and vegetables. Toss everything together until well mixed.
  • Lay out the aluminum foil sheets and evenly divide the chicken and vegetable mixture among them.
  • Squeeze lime juice over each portion and fold the foil over the ingredients, sealing the edges to form a packet.
  • Place the foil packets on a grill over the campfire or on a camping stove, cooking for about 15-20 minutes, turning halfway through the cooking time.
  • Carefully open the packets (watch out for the steam), check that the chicken is fully cooked, and if so, garnish with fresh cilantro.
  • Serve hot, directly from the foil packets, for a rustic and enjoyable camping meal.
