Chicken Salad Lettuce Wraps

Ingredients
  

  • 2 boneless skinless chicken breasts, cooked and shredded
  • 1 head of lettuce preferably Bibb or butter lettuce, leaves separated
  • 1 cup cherry tomatoes halved
  • 1 cucumber thinly sliced
  • Dressing of choice e.g., vinaigrette, ranch, or Asian-inspired dressing

Instructions
 

  • If not already grilled, cook the chicken on a grill or portable stove until fully cooked. Let it cool slightly before shredding or chopping.
  • Wash and dry the lettuce leaves, cherry tomatoes, and cucumbers.
  • Lay out the lettuce leaves on a flat surface, ready for filling.
  • Place a portion of shredded or chopped grilled chicken onto each lettuce leaf.
  • Top the chicken with halved cherry tomatoes and sliced cucumbers.
  • Drizzle your desired dressing over the chicken and vegetables.
  • Carefully fold the lettuce leaves over the filling to create wraps, ensuring the filling is enclosed.
  • Secure the wraps with toothpicks if necessary to hold them together.
  • Serve the Chicken Salad Lettuce Wraps immediately, either as a light meal or as part of a larger camping spread.
