Ingredients
  

  • 1 block firm tofu cut into cubes
  • 2 bell peppers cut into chunks
  • 1 cup cherry tomatoes
  • 1 zucchini sliced
  • 8-10 mushrooms
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning

Instructions
 

  • Preheat your campfire grill or set up a campfire with a grate over the flames.
  • In a small bowl, combine the olive oil, salt, pepper, and Italian seasoning to make a marinade.
  • Thread the tofu cubes, bell pepper chunks, cherry tomatoes, zucchini slices, and mushrooms onto skewers, alternating between the ingredients.
  • Brush the skewers with the prepared marinade, ensuring they are evenly coated.
  • Place the skewers on the grill or over the campfire, ensuring they are positioned on a stable surface.
  • Cook the skewers for 8-10 minutes, turning occasionally, or until the vegetables are tender and the tofu is lightly charred.
  • Remove the skewers from the heat and serve hot.
