Ingredients
  

  • 2 lbs of baby potatoes thinly sliced
  • 1 packet of ranch seasoning mix
  • 6 slices of bacon cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream optional
  • 1/4 cup green onions chopped
  • Salt and pepper to taste
  • Olive oil or melted butter
  • Aluminum foil for packets

Instructions
 

  • Preheat the Grill/Campfire: Heat your grill or campfire to medium-high heat, approximately 400°F (200°C).
  • Wash the Potatoes: Clean the baby potatoes thoroughly.
  • Slice the Potatoes: Thinly slice the baby potatoes.
  • Season the Potatoes: In a large bowl, drizzle the sliced potatoes with olive oil or melted butter.
  • Add Ranch Seasoning: Sprinkle the ranch seasoning mix over the potatoes.
  • Toss the Potatoes: Toss the potatoes until they are evenly coated with the seasoning and oil.
  • Prepare the Foil: Lay out 4 large pieces of aluminum foil.
  • Assemble the Packets: Divide the seasoned potatoes evenly among the foil pieces.
  • Add Bacon and Cheese: Sprinkle crumbled bacon and shredded cheddar cheese over the potatoes on each foil piece.
  • Seal the Packets: Fold the foil over the potatoes and crimp the edges to seal them tightly.
  • Grill the Packets: Place the foil packets on the grill or over the campfire for 20-25 minutes, turning them halfway through.
  • Check for Doneness: Ensure the potatoes are tender before removing from the grill.
  • Garnish and Serve: Open the packets carefully, garnish with green onions, and optionally, add sour cream. Season with salt and pepper to taste.
